Step 1
Add a drizzle of oil to a pan (with a lid) and cook the onion and garlic. When almost ready, add the salmon
Step 2
When the salmon is cooked on both sides but still a bit pink in the middle, add the coconut milk, sundried tomatoes, spinach, and salt
Step 3
Put the lid on and simmer for a few minutes to reduce the coconut milk
Step 4
Once the sauce has thickened stir in the drained cannellini beans. Heat them for a minute or two until warmed and then serve
