300gdried medium egg noodles

2 tablespoonssesame oil

2garlic cloves

4green onions
scallions, finely sliced

Instructions
Step 1
Cook Noodles: Cook noodles according to package directions. Drain and toss with 1 tablespoon of sesame oil.


Step 2
Make Spicy Peanut Sauce: Whisk together peanut butter, hoisin sauce, soy sauce, sesame oil, chili oil, honey, lime juice, rice vinegar (if using), and fish sauce (if using) in a bowl.









Step 3
Sauté Aromatics and Meat: Heat remaining sesame oil in a large skillet or wok over medium-high heat. Add garlic, scallions, and ginger; cook for 1 minute until fragrant. Add pork or chicken mince and cook, breaking it up with a spoon, until browned.





Step 4
Combine Sauce and Stock: Pour chicken stock into the skillet and bring to a simmer. Add the spicy peanut sauce and stir until heated through and combined.










Step 5
Toss with Noodles: Add cooked noodles to the sauce and toss to coat.

Step 6
Garnish and Serve: Divide noodles among bowls. Garnish with sliced green onions, red chili, chopped peanuts, toasted sesame seeds, and fresh cilantro.
