Ingredients

For the 'paneer'
For the sauce

100gspinach leaves
washed

0.5white onion
roughly chopped

4garlic cloves
peeled

5 cmfresh ginger
piece, peeled and roughly chopped

fresh coriander
stalks only

0.5juice of lemon

2 tspground cumin

2 tspgaram masala

1 tspsugar

200mlcoconut milk

Instructions
Step 1
Cut the tofu into bite size chunks and dust with the Garam masala and turmeric. Heat a splash of oil in a lan and cook until golden at the edges. Alternatively air fry for 10 mins at 200c.
Step 2
For the sauce, place all the ingredients, except the coconut milk, into a blender and purée.
Step 3
Pour the sauce into the pan and gently cook until fragrant and bubbling, stirring frequently.
Step 4
Return the tofu to the pan with the sauce, add the coconut milk and season with more salt if necessary
Step 5
Serve hot, garnished with coriander and a lime wedge.
