Instructions

Rice

Step 1
Heat a medium pot and add oil, garlic, taco seasoning, and rice. Cook for 1-2 minutes until fragrant, stirring constantly.
Step 2
Meanwhile drain and rinse beans. Set aside.
Step 3
Add water and reduce to a simmer. Cover and cook for 10-15 minutes, stirring the rice every 5 or so minutes to check for doneness.
Step 4
Once cooked, add beans and stir. Then divide into individual bowls/containers and set aside.

Toppings

Add onion, peppers, and corn to a pan with olive oil and taco seasoning. Cook until softened.
Step 6
Once vegetables are ready, add shredded chicken and mix until heated through. Remove from heat and add to the containers with the rice.

Salad

Step 7
Mix sour cream and salsa. Pour into individual containers.

Assembly

Step 8
Heat the rice/veggie/meat mix for about a minute in the microwave.
Step 9
Pour the rice into a large bowl and top with salad. Top with the dressing, guacamole and cheese and mix well.
