Ingredients

9Spinach sheets
or whole wheat lasagna

2chicken breasts

1leek

1red bell pepper

1onion

1carrot

0.5zucchini

300mlpassata

125mltomato Frito

3 Tbspred pesto

3sundried tomatoes
diced finely

300mlcottage cheese

1egg

0.5Lemon juice
lemon

lemon zest

2 tspsalt

2 tspblack pepper

1 Tbspitalian seasoning

½ tspchili powder

1 tsppaprika powder

1 tspmaggi seasoning

80gparmesan cheese
grated

100gmozzarella

200gspinach
3 sprayslight

1garlic clove

1 Tbsptomato puree
Instructions
Step 1
Heat oven to 200 degrees Celsius.
Step 2
Dice chicken into small cubes. Bake with 2 sprays fry light, a little salt and pepper. Take out of the pan, set aside.
Step 3
Put vegetables in the pan with 1 spray fry light. Let cook for 3 minutes, then add the garlic
Step 4
Add tomato puree and cook for 1 minute. Add back the chicken and Add 1 tsp Italian seasoning
Step 5
Add tomato Frito and passata, Maggi seasoning and red pesto. Cook for 5 minutes
Step 6
Meanwhile, blend the cottage cheese, lemon zest, lemon juice, egg, salt, pepper en 2 tsp Italian seasoning in blender until smooth. Put in a bowl and mix in parmesan cheese. Set aside
Step 7
Add layer of sauce, followed by lasagna sheets. Add layer of cottage cheese, spinach and sauce. Repeat layers until sauce is gone and you can end with a layer of cottage cheese.
