The humble beetroot is so healthy and oh so tasty. These tasty air fryer beetroot muffins are moist, and so quick to make! You’ll love these muffins for breakfast, dessert or a snack.

Instructions

Step 1
grate half a beetroot into a mixing bowl, along with 2 grated carrots, a handful of parmesan cheese, 1 egg, a teaspoon of turmeric, 100g of flour, a teaspoon of onion granules and season with salt and pepper.
Step 2
Mix all the ingredients together well, then place a tablespoon into each silicon mould.
Step 3
Then pop the silicone moulds into your air fryer drawer on 180c for around 15 minutes.
Step 4
Keep a close eye on muffins whilst they cook as cooking times may vary depending on what type of air fryer you use.
Step 5
Once cooked, carefully remove the moulds from the drawer. remove the muffins from the moulds and place on a cooling rack.
