Step 1
Preheat oven to 350° f. Prepare muffin pan by coating lightly with spray and set aside. Steamed broccoli until tender. Set aside. Heat a medium stick non-stick pan over medium heat. Add sausage cook, stirring occasionally. Until cooked, when cool enough to handle chop into small pieces. Combine eggs, broccoli, sausage, quinoa, green onion, salt and pepper in a large mixing bowl and mix well. Evenly. Divide mixture among muffin cups. Bake for 15 to 18 minutes or until a toothpick insert it into the center. Comes out clean and eggs are set.
