Chicken & rice (not boring)
This dinner is an lovely varied combination of: (a) dinner prepping at the weekend (chicken, rice and veg), (b) the sauce (remember, it's all about the sauce), and (c) knowing that NOTHING beats a simple salad of tomato and mozzarella slices.
The number of ingredients is justified by the number of dinners you will get out of this. Four days of dinners = most of the week. Granted, they'll be the same every day, but you can play around with other sauces and salads. Or freeze the chicken, rice and veg and make the sauce and/or salad on the day.
Unfortunately I'm too lazy to put all the amounts. Weź na oko.

Instructions
Step 1
Fry the chicken in oil with paprika, salt and pepper. Surprisingly, if you stop cooking just before it turns brown, it will still be reasonably soft after 3-4 days.
Step 2
Roast the pepper, courgette and whole garlic cloves with olive oil.
Step 3
Make the rice.
Step 4
Blend spinach, parsley, dill, chives, garlic, olive oil, lemon and seasoning.
Step 5
Salad: mozzarella, tomato, dried Italian herbs, olive oil, 1 chopped garlic clove from the roasted veg batch, balsamic vinegar, seasoning.
