450gbeef flank steak
thinly sliced against the grain

¼ cupcornstarch

¼ cupall-purpose flour

½ tspbaking soda

½ tspsalt

½ tspblack pepper

½ cupvegetable oil
for frying

2dried red chilies
chopped

3 clovesgarlic
minced

1 inchginger
piece, minced

¼ cupsoy sauce

2 Tbsprice vinegar

2 Tbspsugar

1 tspSichuan peppercorns
crushed

2green onions

Instructions
Step 1
In a mixing bowl, combine the sliced beef with cornstarch, all-purpose flour, baking soda, salt, and black pepper. Toss until the beef is well coated. Heat vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, carefully add the beef in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove the beef and drain on paper towels.
Step 2
In the same skillet, reduce the oil to about 1 tablespoon and add chopped dried red chilies, minced garlic, and ginger. Stir-fry for about 30 seconds until fragrant. Add soy sauce, rice vinegar, sugar, and crushed Sichuan peppercorns, stirring well to combine. Return the crispy beef to the skillet, tossing to coat in the sauce. Cook for an additional 1-2 minutes until heated through.
Step 3
Garnish with chopped green onions before serving. Enjoy this spicy and crispy dish with steamed rice or noodles for a complete meal!
