Instructions

Chicken

Step 1
Season the chicken and drizzle with olive oil

Add butter to skillet and cook chicken on medium high heat, 5-6 minutes per side

Let chicken rest

While the chicken is resting, boil the pasta according to directions on package, then chop the onion and cilantro

While the pasta is cooking, cook the corn in the same skillet from the chicken

When the corn is cooked/heated, remove from heat and set aside

For the sauce

Add all sauce ingredients to a blender or food processor and blend until smooth

Assemble

Step 8
Add pasta, onion, cilantro, cubed chicken, and sauce to a serving dish and mix until pasta is covered

Top with tajin/red pepper flakes and cotija cheese
