Step 1
In a pot, heat olive oil or butter over medium heat.

Add onions and cook for 2-3 minutes until soft.

Add garlic and sauté for another 30 seconds until fragrant.
Simmer the Soup

Pour in broth, add thyme and black pepper, and bring to a gentle simmer.

Let it cook for 5-7 minutes to infuse the flavors.
Finish with lemon and herbs

Stir in lemon juice and zest.

Remove from heat and sprinkle with fresh parsley/cilantro.
