Step 1
In a small saucepan over low heat, cook milk, butter, garlic, and a pinch of salt and pepper. Cover and let butter slowly melt and garlic steep while potatoes cook, about 30 minutes. Discard garlic.
Step 2
Add cauliflower, milk mixture and three-quarters of the feta into food processor. Pulse until creamy. Add salt & pepper to taste.
Step 3
Transfer mashed cauliflower to a bowl. Top with a few pats of butter, parsley, and remaining feta.
