200gchicken breast
diced

2 tspcajun seasoning

2 tspsmoked paprika

2 tspdried oregano

130gpasta

1 tspgarlic purée

1red onion
diced

1green pepper
diced

25ghoney

1 Tbspsoy sauce

50gbarbecue sauce

220gtinned chopped tomatoes

40greduced fat mature Cheddar

Instructions
Step 1
Spray an ovenproof frying pan with low calorie cooking spray and set over a medium heat. Season the chicken with 1 teaspoon each of the Cajun seasoning, smoked paprika and oregano and some salt and pepper (to taste). Pan-fry for 10-12minutes until almost cooked and remove from the pan.
Step 2
Cook the pasta according to the packet instructions. While the pasta cooks, add the garlic puree to the frying pan along with the onion and green pepper. Fry for 4 minutes.
Step 3
Add the honey, soy sauce, barbecue sauce and remaining seasoning to the pan, followed by the chopped tomatoes. Shred the cooked chicken and add to the mixture
Step 4
Add the cooked and drained pasta and mix well. Top with the cheese and melt under the grill (or you can also cover the pan with a lid and use the hob).
Step 5
Garnish with spring onions and dried parsley to finish, if you like
