Instructions

Step 1
Cook farro, edamame and pinto beans according to package instructions. Cook lentils in 6 cups water 20-25 minutes. Season chicken with 1/2 of the seasonings. Heat 2 tablespoons of oil in a skillet on medium high heat, until fully cooked. Once cooked, let rest, the slice into bite sized pieces. Cube the tofu and cook on medium high heat in 1 tablespoon of olive oil until golden brown. Saute vegetables in remaining oil for 8-10 minutes. Add mushrooms and cook til softened. Add greens, sauting until wilted 3-4 minutes. Season mixture with rest of seasonings. Combine grains, proteins and vegetables in a large mixing bowl. Add chia seeds, flaxseeds and apple Cider Vinegar and stir well to combine. Portion and store.
