Instructions
Step 1
In a separate bowl, combine water, salt, chicken powder (or chicken bouillon), and potato flour. Mix thoroughly to create a smooth mixture.

In another bowl, crack the eggs and add few dashes of white pepper and beat them well.

Gradually add the water mixture to the beaten eggs, stirring gently until well combined. Set the mixture aside for later use.
Step 4
Place a ladle of oil into a wok and heat it until it starts smoking hot. Once hot, remove the oil, leaving a small amount in the wok.

Add the long beans to the wok and stir-fry them. Sprinkle a pinch of salt over the long beans as they cook, ensuring they get seasoned evenly.

Transfer the cooked long beans into the bowl with the beaten egg mixture. Stir to combine.
Step 7
Add a bit more oil to the wok than usual, just like you would when frying a crispy egg. Using a ladle, scoop 1 to 2 ladles of the egg and long bean mixture. Gently pour it into the wok, spreading it evenly.
Step 8
Fry until the bottom of the omelette is set and dry. Carefully flip the omelette over and continue frying until it is golden brown and fragrant.
Step 9
Once cooked, remove the omelette from the wok and serve hot.
