Banana Pancakes with Maple Syrup

The bananas add sweetness and texture to this traditional breakfast dish. For extra fiber, use
white whole wheat flour for some of the all-purpose flour.

Step 1
1. COMBINE the flour, sugar, baking powder, and salt in a
large bowl, Combine the milk, egg, oil, and vanilla in a
separate bowl. Stir the milk mixture into the flour mixture
until smooth. Gently fold in the banana slices.
2. COAT a large nonstick skillet with cooking spray and
heat over medium heat. Spoon 4 scant % cups of batter
into the skillet and cook for 2 to 3 minutes, or until the
tops are covered with bubbles and the edges look
cooked. Flip and cook for 2 minutes, or until browned on
the second side. Transfer to a plate and keep warm.
Repeat with the remaining batter and cooking spray as
needed. Serve 3 pancakes per person, drizzled with 4
teaspoons maple syrup.
