Instructions
Step 1
Cook pasta as directed on box, adding broccoli during the last 3 minutes. Scoop out 1 cup of cooking liquid, then drain.
Step 2
Toss pasta and broccoli with 1 Tbsp olive oil
Step 3
Warm remaining 1 Tbsp oil in skillet over medium-high heat (it is ready when bubbles form on wooden spoon)
Step 4
Add chicken, onion and garlic, sprinkle with salt and pepper, and sauté for 5 minutes.
Step 5
Add tomatoes and sauté for another 2 minutes
Step 6
Toss in pasta, broccoli and parmesan. Add cooking liquid as needed (though I don't normally need to use it).
Step 7
Remove from heat once parmesan is melted and everything is stirred together
Step 8
Serve hot and enjoy!
