Step 1
1. Sauté the veggies:
In a skillet over medium heat, warm a bit of olive oil. Add mushrooms, bell pepper, and onion. Cook for 4–5 minutes until softened and slightly caramelized. Toss in the spinach for the last minute to wilt it. Set aside. 2. Assemble the sandwich: Spread pizza sauce on one or both slices of bread. Layer on pepperoni, cooked bacon, sautéed veggies, and cheese. Sprinkle with oregano or Italian seasoning. 3. Grill it: Butter or oil the outside of the bread. Grill in a skillet or sandwich press over medium heat for 3–4 minutes per side, until the bread is golden and the cheese is melty.
