Brisket Rub

2 TBpaprika

2 Tgranulated garlic

1 Tchili powder

½ tspcayenne

1 Tkosher salt

2 tspblack pepper

4 poundsbrisket
deckle cut, vut into 3 wedges
BBQ Sauce

2 CBeef Stock

1 cbbq sauce

½ cketchup

¼ cyellow mustard

2 tworcestershire sauce

2 tapple cider vinegar

1 tspliquid smoke

¼ tspred chilli flakes

2 Tcanola oil

1yellow onion
large, sliced 1/4 inch thick

1red bell pepper
seeded and cut into 1/4 " slices

1green bell pepper
seeded and cut into 1/4" strips

1 x 12 ozlager beer

¼ cupgreen onions
thinly sliced
Instructions
Step 1
Combine brisket Rub ingredients and rub all over the brisket.
Step 2
Wrap in plastic and refrigerate for two hours or up to overnight on a sheet pan.
Step 3
In pressure cooker over medium high heat, heat canola oil and brown brisket pieces on all sides for 6-7 minutes.
Step 4
Add onions and bell peppers and cook for 1-2 minutes.
Step 5
Pour in BBQ sauce and beer and enough water to cover 3/4 way up the instant pot.
Step 6
Cover with pressure cooker lid and cook on high pressure sealed for 45 minutes. Natural release for 10 minutes.
Step 7
Transfer the meat to a cutting board and simmer the BBQ sauce liquid until it is slightly thickened and reduced.
Step 8
Slice against the grain and serve with veggies and sauce on top.
