Beef Fajitas

These are like tacos but softer and have a lovely smoky flavour. I like to cook this recipe on a BBQ flat plate, but you can also use a fry pan, though if using a pan, you will need to cook things in batches to not crowd the pan.

Instructions

Step 1
Preheat a BBQ flat plate to high heat. Note; a griddle is not suitable for this recipe.

Slice beef into thin strips and place in a bowl with the fajitas mix. Mix well so that all the beef is coated, then set it aside.

De-seed both capsicums, then slice into strips and place in a bowl. Slice the mushrooms and add to the bowl with the capsicums.

Remove the outer skin from the onion, then slice the onion into strips, cutting it in half lengthways first. Add to the onions to the bowl with the beef.

Halve the avocado, remove and discard the seed, then slice the avocado into strips and set aside.

When the BBQ plate is hot (or if using a fry pan, see the note above in the description), add a drizzle of oil, then add the beef and onions. Cook both for a minute, turning frequently with a BBQ safe spatula or tongs.

Next, add the capsicum and mushrooms to the BBQ plate with the beef and onions, and mix them altogether, turning frequently. Cook for 2-3 minutes, then add the spinach leaves to the top of the mix and allow it to wilt and mix it through.

Remove all from the heat and place into a serving bowl.

Remove the tortillas from the packet and place them on a plate and heat in a microwave for 20 seconds on high (or follow packet instructions for heating).

To serve

Take the serving bowl of beef and veg mix to the table along with the tortillas.

Using tongs, place some of the beef mix into a tortilla, along with a small spoon of sour cream, a slice or two of the avocado, and a squeeze of the lime, add some hot sauce to if you like. Fold in half like a taco, and enjoy!
