Instructions

1. Start cooking the brown rice or quinoa:

Follow package instructions — brown rice usually takes about 40–45 minutes, so get it going first. Use water or low-sodium broth for extra flavor. Set aside once done.

2. Cook the chicken (if not already cooked):

Place slightly frozen or thawed chicken breasts in a pot and cover with water or broth. Add salt, garlic, and optional herbs like bay leaf or onion for flavor. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes, or until internal temp reaches 165°F. Let rest 5 minutes, then shred or dice.

3. Preheat oven to 375°F (190°C).

4. Prep the bell peppers:

Cut them in half lengthwise, remove seeds and membranes, and brush the inside and outside with olive oil. Place cut-side up in a large baking dish.

5. Make the stuffing:

In a large bowl, mix the cooked chicken, cooked rice, drained tomatoes, feta, olives, minced garlic, oregano, salt, pepper, and 2 tbsp olive oil.

Fill each pepper half with the mixture. Cover the baking dish with foil and bake for 30 minutes. Then uncover and bake for another 10–15 minutes until tender and slightly browned.

7. Make the tzatziki sauce:

Grate the cucumber and squeeze out moisture with a towel. In a bowl, mix Greek yogurt, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Chill in the fridge.

In a large bowl, combine spinach, cucumber slices, red onion, and chopped parsley. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Toss just before serving.
