Instructions

Step 1
* Sauté Aromatics: Heat the oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Step 2
* Toast Spices: Stir in the turmeric, cumin, and cayenne pepper (if using). Cook for about 30 seconds, stirring constantly, until fragrant. This helps to bloom the spices and release their flavor.

* Add Rice: Add the rice to the saucepan and stir well to coat the grains with the oil and spices. Cook for 1-2 minutes, stirring occasionally, until the edges of the rice grains start to look slightly translucent.

* Add Liquid and Simmer: Pour in the vegetable or chicken broth and add the salt. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan tightly with a lid, and simmer for 15-18 minutes, or until all the liquid has been absorbed and the rice is tender. Avoid lifting the lid during this time.
Step 5
* Add Peas or diced Carrot: During the last 5 minutes of cooking, gently stir in the frozen peas. They will cook through with the residual heat.

* Toast Almonds (if not already toasted): While the rice is simmering, if your almonds aren't already toasted, you can toast them in a dry pan over medium-low heat, stirring frequently, until they are golden brown and fragrant. Be careful not to burn them. Alternatively, you can toast them in a preheated oven at 180°C (350°F) for a few minutes, keeping a close eye on them.
Step 7
* Fluff and Serve: Once the rice is cooked, remove it from the heat and let it stand, covered, for 5 minutes. Then, fluff the rice gently with a fork. Stir in the toasted slivered almonds.

* Serve: Serve the aromatic turmeric rice alongside your delicious sweet and smoky beef kebabs.
