Instructions

Prepare noodles

Step 1
Soak rice noodles in warm water for 25–30 minutes, or until soft and pliable. Drain and set aside.

Make the sauce

Step 2
In a bowl, whisk together tamarind paste, soy sauce, coconut sugar, lime juice, chili paste, and water. Set aside.

Cook tofu

Step 3
In a hot wok or large pan, heat 1 tbsp oil. Add tofu and cook until golden on the edges. Set aside.

Stir-fry the base

Step 4
Add the remaining oil. Sauté garlic and shallot until fragrant (about 30 seconds). Add carrots (if using) and stir-fry for 1–2 minutes.

Combine everything

Step 5
Add the softened noodles and sauce to the pan. Toss everything to coat, then add the tofu, green onions, and 2 tablespoons of crushed peanuts. Stir-fry for another 1–2 minutes.

Garnish and serve

Step 6
