For the sauce

3 Tbsptamarind paste

2 Tbspsoy sauce
or tamari for gluten-free

1 Tbspdark soy sauce
optional, for color

1 ½ Tbspcoconut sugar
or brown sugar

1 Tbsplime juice

1 tspchili paste
or sriracha, optional for heat

2 Tbspwater
For the noodles

200gfirm tofu
crumbled or cut into small cubes

200gflat rice noodles

2 Tbspneutral oil
like sunflower or avocado oil

2cloves garlic
finely chopped

2 Tbsproasted peanuts
crushed

1shallot
small, minced

½ cupcarrot
shredded, optional

½ cupgreen onions
chopped, reserve some for garnish

1 cupmung bean sprouts

1 cupgarlic chives
or scallions, cut into 2-inch pieces

Instructions
Prepare noodles
Step 1
Soak rice noodles in warm water for 25–30 minutes, or until soft and pliable. Drain and set aside.


Make the sauce
Step 2
In a bowl, whisk together tamarind paste, soy sauce, coconut sugar, lime juice, chili paste, and water. Set aside.







Cook tofu
Step 3
In a hot wok or large pan, heat 1 tbsp oil. Add tofu and cook until golden on the edges. Set aside.




Stir-fry the base
Step 4
Add the remaining oil. Sauté garlic and shallot until fragrant (about 30 seconds). Add carrots (if using) and stir-fry for 1–2 minutes.



Combine everything
Step 5
Add the softened noodles and sauce to the pan. Toss everything to coat, then add the tofu, green onions, and 2 tablespoons of crushed peanuts. Stir-fry for another 1–2 minutes.




Garnish and serve
Step 6
Plate the noodles and top with crushed peanuts, extra green onions, and herbs. Serve with lime wedges and chili flakes on the side.
