Instructions
Step 1
Saute the shrimp with the fajita seasoning
Step 2
Add one chopped sweet potato saute for 10min
Step 3
Add red onion and bell pepper, saute for 10 to 15 min. Or until cooked through
Step 4
Add in black beans. Frozen corn and the shrimp back in.
Step 5
Squeeze half a lime. Cook for a few minutes
Step 6
Serve with salsa verde and Greek yogurt
