½ tspground cumin

½ tspground coriander

¼ tspcayenne

2 tspkosher salt

2 lbboneless skinless chicken breasts
trimmed

1 cupplain whole-milk yogurt

2 Tbspvegetable oil

2cloves garlic
minced

Step 1
Combine cumin, coriander, cayenne, and salt in a sm bowl. Sprinkle chicken with spice mixture and press gently to adhere. Cover with plastic wrap and refrigerate 30-60 min. Whisk together, yogurt, oil, garlic, and ginger. Set aside.
Step 2
While sauce simmers, adjust oven rack to 6" below broiler and heat broiler. Using tongs, dip chicken in yogurt mixture and set on wire rack lined baking sheet. Broil until chicken registers 160, and is lightly charred in spots, 10-18 min, flipping halfway through.
Step 3
Let Chicken rest 5 min. Cut into 1-inch pieces and stir into warm sauce. Do not simmer. Stir in cilantro and season to taste.

Heat oil in Dutch oven over med heat. Add onion and stir frequently until light golden, 8-10 min. Add garlic, ginger, serrano, tomato paste, and garam masala and cook, stirring frequently, until fragrant, about 3 min. Add crushed tomatoes, sugar, and salt and bring to boil. Reduce heat, cover, and simmer 15 min, stirring occasionally. Stir in cream and return to simmer. Remove from heat and cover to keep warm.
