Step 1
Toss the tofu cubes in a bowl with the cumin, nutritional yeast and a good pinch of salt.
Step 2
Put the oil in a medium nonstick frying pan over a medium-high heat and fry the tofu until crisp and golden on all sides.
Step 3
Whizz all the spinach curry ingredients in a blender until smooth.
Step 4
Tip into a large saucepan over a medium heat and bring to the boil.
Step 5
Add the tofu, turn down the heat to low and simmer until the curry has thickened, about 15 mins.
Step 6
Serve warm, garnished with a drizzle of soy cream or vegan yoghurt, shredded ginger and lime wedges.
