Step 1
Preheat the oven to 450°F. Peel and cut the beets into ½-inch wedges. Dice the potatoes into ½-inch cubes. Place the vegetables on a parchment-lined sheet pan. Drizzle with olive oil, season with salt and pepper, and toss to coat. Roast the vegetables for 20 to 25 minutes, flipping halfway through, until tender and slightly crispy.
Step 2
Pat the chicken dry with paper towel, then season it on both sides with salt and pepper. In a medium pan, heat a drizzle of oil on medium-high. Add the chicken and cook for 6 to 8 minutes per side until golden brown and cooked through. Reduce the heat and add the maple syrup, apple cider vinegar, and chopped thyme. Spoon the glaze over the chicken and cook for another 1 to 2 minutes until nicely coated and glossy. Reserve any remaining glaze for serving.
Step 3
Slice the glazed chicken. Divide the roasted potatoes, beets, and sliced chicken between your plates. Drizzle any remaining maple-thyme glaze over the chicken. Bon appétit!
