Step 1
In a pressure cooker, add the rice bran oil, onion, garlic and whole spices as per taste. Add the quinoa, vegetables, rice, salt and pepper with some water. Pressure cook for 1 whistle, then reduce the heat. Cook for another 20 minutes then switch off the heat. Don’t touch the cooker or whistle for 45 minutes. This preserves the water-soluble vitamins.
Step 2
Open the cooker without taking off the whistle, mix well and serve hot. The ratio of vegetables to rice after cooking should be 50:50. In case you want your khichadi even softer, you can cook for an extra 10 minutes in the pressure cooker. You can also blend it for easier swallowing and absorption.
