Fajita Seasoning

2 tspchili powder

2 tspground cumin

1 tspdried oregano

1 tspgarlic powder

1 tsponion powder

1 tsppaprika

1 tspgranulated sugar

1 tspkosher salt

⅛ tspcayenne pepper
plus more to taste
Fajitaroni with Beans

1 Tbspcanola oil

¼ cupred onion
sliced

2bell peppers
1 red 1 green, sliced

0.5 lbsground chicken

0.5 lbsground beef lean

1 x 14.5 ozcan of diced tomatoes

1 x 15.5 ozcan of black beans
drained and rinsed

1 cupcan corn kernels

2 cupsbeef stock

1 x 12 ozgluten free pasta
box, fusili

0.5lime juiced

1 cupoaxaca cheese
shredded

0.5lime
cut into 4 wedges

cilantro
Instructions
Step 1
Combine fajita seasoning ingredients together in a bowl and mix well











Step 2
Heat olive oil in pot then lightly sauté onions and bell peppers. First onions until they just start to soften, then add bell peppers. Remove onions and peppers before the peppers get soft and set aside.







Step 3
In the same pot that you sautéed the onion and peppers, over medium-high heat, add ground beef, chicken, and half of the fajita seasoning, brown beef until it is no longer pink, about 6-9 minutes





Step 4
Add tomatoes, beans, corn, stock, reserved fajita seasoning, and pasta to pot and mix well. Cover and bring to a boil









Step 5
Reduce heat and simmer uncovered for 15 minutes; stirring every couple of minutes



Step 6
Remove from heat and stir in previously cooked onions and peppers, lime juice, and cheese until mixed through and smooth




Step 7
Serve with lime wedges and cilantro
