Instructions

Step 1
Pat chicken pieces dry. Toss with the chicken spice mix (smoked paprika, garlic powder, onion powder, crushed red pepper flakes, oregano, salt, and pepper). Can let rest for 30 min.
Step 2
Bring a large pot of salted water to a boil. Cook linguine until al dente according to package instructions. Reserve ½ cup pasta water, then drain and set pasta aside.
Step 3
Heat 1 tsp olive oil in a large skillet over medium-high heat until hot. Add chicken in a single layer (do not crowd). Cook 3-4 minutes per side until browned and cooked through. Remove chicken and set aside.
Step 4
Add remaining 2 tsp olive oil to skillet. Add red onion, bell peppers, and mushrooms. Cook 5-7 minutes until softened and lightly browned.
Step 5
Stir in minced garlic and cook 1 minute until fragrant.
Step 6
Lower heat to medium-low. Stir in tomato paste (if using) and crushed red pepper flakes. Slowly pour in heavy cream, stirring to combine. Simmer gently for 3-4 minutes until slightly thickened.
Step 7
Stir in steamed broccoli florets and seared chicken. Cook 2 minutes to heat through.
Step 8
Add linguine to skillet and toss to coat in sauce. Use reserved pasta water to loosen sauce as needed.
Step 9
Taste and adjust salt and pepper. Garnish with chopped fresh parsley or basil and grated Parmesan cheese if desired. Serve immediately.
