Instructions

Step 1
1. Preheat oven to 160°C (320°F) and line a large baking tray with baking paper.

2. In a large bowl, combine oats, chopped nuts, sunflower seeds, hemp seeds, coconut, cinnamon, and salt.

3. In a small bowl, whisk together melted coconut oil, maple syrup (or honey), and vanilla.

4. Pour wet mixture over the dry ingredients and mix well to evenly coat everything.
Step 5
5. Spread mixture out on the tray in an even layer.
Step 6
6. Bake for 20–25 minutes, stirring halfway, until golden and crunchy.
Step 7
7. Let cool completely (it crisps up as it cools), then stir through dried fruit if using.
Step 8
8. Store in an airtight jar for up to 2 weeks.
