When I crave cookies, my scale gets really nervous. That’s because in the past I’ve been known to put on pounds by overindulging in a cookie or two or four. Well, here’s a cookie I’ve put on my Keto Comfort Food Diet by downsizing the carbs and sugar.

Instructions

Step 1
Preheat the oven to 375°F. Line a baking sheet with parchment paper.

In a large bowl, mix together the peanut butter, egg, vanilla, cocoa powder, almond flour, baking soda, and erythritol until smooth.
Step 3
Scoop the dough into 24 (1-inch) balls and flatten with a fork on the prepared baking sheet. Bake until set, 8 to 10 minutes. Let cool completely on the baking sheet. Store in an airtight container for 3 to 4 days.
