Step 1
Cook the bratwurst: Grill or pan-sear over medium heat until browned and cooked through (internal temp: 160°F). Sauté the onions and apple (if using): In a skillet, heat olive oil. Add onions (and apple slices, if desired) and cook until soft and caramelized, about 7–10 minutes. Add sauerkraut & spices: Stir in the sauerkraut and caraway or mustard seeds. Cook for another 5 minutes to warm through and blend flavors. Add greens: Stir in spinach or kale, cooking just until wilted (2–3 minutes). Slice the bratwurst and serve over the skillet mixture. Add mustard on the side if you like with roasted sweet potatoes and bread.
