Instructions
Step 1
Preheat oven to 400* Fahrenheit
Step 2
Heat a drizzle of olive oil in a skillet
Step 3
Add onion and mushrooms. Cook until onions are translucent, then add spinach and cook until wilted
Step 4
In a bowl, mix the egg and ricotta until combined. Add spinach mixture and desired seasonings. Mix until combined.
Step 5
Cook jumbo shells as stated on package
Step 6
Use enough pasta sauce to cover the bottom of the desired baking dish. Fill each cooled pasta shell with spinach ricotta mixture as you place them in the dish. Once finished, cover with remaining pasta sauce and sprinkle desired amount cheeses on top.
Step 7
Cook for 15 mins covered with foil, then remove foil and cook another 15 mins
