Ingredients

10mlolive oil
3onions
medium, diced
4cloves garlic
finely sliced
2 cmginger
piece, peeled, finely sliced
¼ tspground chilli
1 ½ TbspCurry Powder
Traditional
½ tspCumin Ground
½ tspPaprika Ground
½ tspTurmeric Ground
1 x 400gcan diced tomatoes
1 x 270 mLcan light coconut cream
600gchicken breast
diced
175gbroccoli
200gcauliflower
200ggreen beans
160gcapsicum
Instructions
Step 1
Heat oil in a medium saucepan over medium heat; add onions, garlic, ginger and chilli. Sauté for 6-8 minutes or until onions soften.
Step 2
Add the KEEN’S Curry Powder, Cumin, Paprika and Turmeric and cook for a further 2-3 minutes (add a little water if sticking to the bottom of the pan).
Step 3
Stir through tomatoes, coconut cream and chicken, reduce temperature and simmer for 15 minutes.
Step 4
Add Vegetables and continue cooking for 15 minutes.
Step 5
Serving Suggestion: Serve with yoghurt and fresh coriander.
