Instructions
Step 1
Slice the mushrooms, carrots, and pak choi, keeping stems and leaves separate. Cut the tofu into cubes.
Step 2
Heat sesame oil in a pot, add garlic and ginger, and let them release their aroma. Add mushrooms and carrots and cook briefly.
Step 3
Pour in water and bring to a gentle boil, then dissolve the miso paste and add soy sauce to build the broth.
Step 4
Add the tofu and simmer gently, then add pak choi stems first and leaves at the end.
Step 5
Cook the egg separately in boiling water until soft or medium boiled, then peel and set aside.
Step 6
Cook the ramen noodles in boiling water until just tender, then drain.
Step 7
Add the noodles to the broth and warm through for a minute.
Step 8
Serve with the egg cut in half and top with sliced spring onion and cashew nuts.
