Ingredients
4 servings
500gskinless boneless chicken thighs
1onion
diced
4garlic cloves
crushed
1 tspdried oregano
2peppers
diced
1courgette
cut in 1/2 inch half moons
3 Tbsptomato puree
400gtin chopped tomatoes
750mlchicken stock
stock cube
400gtin butter beans
rinsed
150gself raising flour
1 tspbaking powder
50gfeta
parsley
150gfat free greek yoghurt
Instructions
Step 1
Saute chicken and onion for 10 min. Add garlic and oregano and cook 1 min, add peppers and courgette. Stir in tomato puree, chopped tomatoes and stock. Bring to a boil, reduce to simmer covered for 30 min.
Step 2
To make dumplings add flour, baking powder, feta and half parsley and pinch of salt and pepper to mixing bowl and mix well.
Step 3
Add yoghurt and stir till a dough forms. Don't knead. Shape into 4 or 8 dumplings and cover until stew is ready.
Step 4
After 30 min, stir in butter beans.. When it starts to bubble place dumplings on top, cover and cook 20-25 min, until they have risen are fluffy and a skewer comes out clean.
Step 5
Sprinkle with remaining parsley and serve.
