Instructions
Step 1
Fill a large stockpot two-thirds full of water, and bring it to a boil. Add enough salt to the water to make it taste pleasantly salty, like seawater.
Step 2
Add kale, and boil for 5 min, stirring occasionally. Drain into a colander, and set aside.
Step 3
In a dutch oven or other large vessel, melt 2 T of butter over medium-low heat, and add the onions. Saute for 5-10 min until the onions are translucent and soft (not browned).
Step 4
Add the remaining butter, heavy whipping cream, cream cheese, salt, pepper, garlic powder, and nutmeg. Stir well until cream cheese is fully melted.
Step 5
Add the kale to the creamy sauce, and cook, stirring occasionally until the kale is hot and fully cooked through (about 5-10 min).
Step 6
Makes about 8 1-cup servings.
