Prawn and Tomato Gnocchi

This easy pesto gnocchi dish is light but satisfying with prawns and lots of garlic.

Instructions
Step 1
Cook the gnocchi in a pan of boiling water for 3 minutes and drain well, reserving some of the pasta water.
Step 2
Heat the oil in a frying pan on medium heat. Add the onions and garlic and cook for 5-6 minutes.
Step 3
Add the tomato paste, chopped tomatoes, peas and herbs. Bring to the boil, reduce the heat and simmer for 6-8 minutes until thickened and reduced. If reduced too much, add in some of the reserved pasta water.
Step 4
Add in the prawns and cook for 2-3 minutes, until opaque.
Step 5
Toss in the gnocchi, mixing well so that each gnocco is fully coated.
Step 6
Divide between bowls, serving with the sun-dried tomatoes and Parmesan on top.
