There are no rules to Cajun food and I didn't follow any here. This is how I usually make it.

Ingredients
2 servings

0.5can of red beans
kidney, small red, etc

0.5onion

0.5green bell pepper

2celery sticks
what is one celery called? Not a bunch?

1tomato
chopped roughly

2 linkssausage
short, cut into one inch pieces

1chicken bouillon cube
or 1 cup chicken broth

2 cupswater
or 1 cup water if using broth

2 tspcajun seasoning

1 cuprice
cooked separately, for serving
Instructions
Step 1
Add ingredients as you're chopping them, just throw them all into a preheating pot. End with the sausage so you're not chopping veggies on top of pieces of meat.
Step 2
Add liquid, bouillon, spices.
Step 3
Give it all a good stir and put the lid on, turning the temp down to a slow boil.
Step 4
Let it cook for about an hour, till all the vegetables are pretty fallen apart and all the flavors are meshed. During this time cook your rice and it can be done and cooling while this all finishes.
