Ingredients
4 servings

610gchicken breast
or thighs, boneless & skinless, cut into bite-size pieces

1 Tbspcoconut oil

3cloves garlic
minced

1red onion
small, thinly sliced

1bell pepper
any color, chopped

1zucchini
small, sliced

1 cupfresh pineapple chunks
or canned in juice, drained

2 Tbspcoconut aminos
or gluten-free soy sauce alternative

1 Tbspfish sauce
optional, for umami

1 tspfresh ginger
grated

1 Tbsplime juice

1 tsphoney
or coconut sugar, optional, adjust to sweetness

2 Tbspwater

salt
to taste

pepper
to taste

coriander
Optional, chopped, or spring onion for garnish
Instructions
Step 1
Prep all your vegetables and chicken before starting.
Step 2
Heat coconut oil in a large skillet over medium heat. Add garlic, ginger, and onion. Sauté until fragrant, about 2 minutes.
Step 3
Add chicken and cook for 5–6 minutes, until browned and cooked through. Season lightly with salt and pepper.
Step 4
Add bell pepper and zucchini to the pan and cook another 3–4 minutes until slightly softened.
Step 5
Stir in pineapple, coconut aminos, fish sauce, honey (if using), lime juice, and 2 tbsp water. Cook uncovered for 7–10 minutes, stirring occasionally, until the sauce thickens slightly and everything is coated.
Step 6
Taste and adjust seasoning. Add more lime juice or sweetness if needed.
Step 7
Serve hot, garnished with chopped coriander or spring onion. Great with steamed rice or cauliflower rice.
