1.5 lbboneless skinless chicken breasts

1yellow onion
large

2 clovesgarlic
minced

6 cupslow sodium chicken broth

15 ouncecan whole kernel corn

8 ouncecan artichoke hearts
drained

2 cupsfresh mushrooms
sliced

¾ teaspoonsalt

½ tsppepper

¾ tspcrushed red pepper flakes

10 ouncefrozen spinach

15 ouncecan diced tomatoes
drained

1 cuporzo pasta
uncooked

½ cupparmesan cheese
shredded or grated
Instructions
Step 1
Place all ingredients, except the orzo pasta and the parmesan cheese into the slow cooker
Step 2
Cover and cook on low 7-8 hours or on high 4 hours
Step 3
Cook pasta according to package directions
Step 4
Remove chicken shred and return to slow cooker.Along with the cooked orzo pasta
Step 5
Ladle soup into bowls and sprinkle with parmesan cheese
