Instructions

Step 1
Boil 6-8 eggs to desired doneness. I prefer hard boiled 10 minutes.
Step 2
Drain water and place in ice bath to let cool completely.
Step 3
Peel eggs and divide whites from the yolks.
Step 4
Remove the center seeded area of the cucumber and finely dice along with the celery and red onion to have 1 cup total. Place in a bowl.
Step 5
Dice egg whites and add to the veggies.
Step 6
Add the yolks and remaining ingredients to a seperate bowl, using a mixer or immersion blender, blend until completely smooth. Alternatively you can use a small food processor.
Step 7
Fold in egg whites and veggies.
Step 8
Serve with veggies, cheese crisps or crackers.
