Ingredients

1.5 lbslean beef
stew meat or flank steak, cut into chunks
2 cupsgreen beans
fresh or frozen, ends trimmed
0.5onion
medium, sliced
1 cupmushrooms sliced
2celery stalks
chopped
1 headbok choy
small, chopped, white and green parts separated
2 cupsbaby spinach
2cloves garlic
minced
1 tspfresh ginger
grated
2 Tbspcoconut aminos
or low-sodium soy sauce
1 Tbsprice vinegar
1 tspsesame oil
salt
to taste
pepper
to taste
Instructions
Step 1
Optional (for flavor): Quickly sear beef chunks in a hot pan with a little olive or avocado oil, just until browned.
Step 2
Layer in Crockpot:
Step 3
Add beef, onion, mushrooms, celery, bok choy stems, green beans, garlic, and ginger.
Step 4
Pour in coconut aminos, vinegar, sesame oil, and season with salt, pepper, and optional chili flakes.
Step 5
Add ½ cup water or broth if needed for extra moisture.
Step 6
Cook on:

LOW for 6–7 hours or
Step 8
HIGH for 3–4 hours, until beef is fork-tender and veggies are soft.
Step 9
Add last:

During the last 15–20 minutes, stir in bok choy greens and spinach until wilted.
Step 11
Serve hot, topped with sesame seeds or green onion if desired.
