1 lbboneless skinless chicken breast
¼ cupunsweetened peanut butter
2 Tbsplow-sodium soy sauce
or coconut aminos
1 Tbsprice vinegar
1 Tbsplime juice
1 tspgrated ginger
1clove garlic
minced
¼ cupchicken broth
½ cupbroccoli
steamed, per serving
½ cupcauliflower rice
per serving
1 Tbsppeanuts
chopped, optional
1 Tbspcilantro
chopped, optional
Instructions
Step 1
Toss chicken breast with peanut butter, soy sauce or coconut aminos, rice vinegar, lime juice, grated ginger, minced garlic and chicken broth in a crockpot.
Step 2
Cook on low for 4–5 hours or until chicken is tender.
Step 3
Shred the chicken and stir well.
Step 4
Serve with steamed broccoli and cauliflower rice.
Step 5
Top with chopped peanuts and cilantro if desired.
