Cauliflower Purée and Cheese Sauce

Instructions

Step 1
Step 1. Bring a large pot of salted water to a boil and cook the potatoes until tender, about 15 minutes. Drain well, mash until smooth, season with half the salt and pepper, and keep warm.

Step 2. In a separate pot, bring salted water to a boil and cook the cauliflower florets until just tender, about 5-6 minutes. Drain well and place in a lightly greased ovenproof baking dish.

Step 3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk, stirring constantly until the sauce thickens, about 5 minutes. Add 150 grams of the Gouda cheese and stir until melted and smooth.

Step 4. Pour the cheese sauce over the cauliflower in the baking dish and sprinkle the remaining 50 grams of Gouda cheese on top.

Step 5. Heat the olive oil in a skillet over medium heat. Add the sausage and cook until browned and cooked through, about 6-8 minutes. Slice into bite-sized pieces.
Step 6
Step 6. Preheat the oven to 200°C (400°F) and bake the cauliflower gratin for 15-20 minutes until golden and bubbling. Serve the gratin alongside the potato purée with sausage on the side or on top.
