Instructions

Step 1
Step 1. Prepare the ginger by thinly slicing and cutting it into fine shreds. Mince the garlic and chop the scallions, including the green parts. Toast the sesame seeds in a dry pan over medium heat for 1-2 minutes until golden brown, shaking the pan occasionally, then transfer to a bowl. Heat canola oil and sesame oil in the same pan over medium heat, add garlic and ginger, and cook until pale gold but not brown. Add the mixture to the sesame seeds along with any remaining oil, lemon juice, soy sauce, and chopped scallions. Season the cod with salt and pepper, spread three-quarters of the mixture over the skinned side of each fillet, roll up the fillets firmly, and spoon the remaining mixture over the top. Cover and refrigerate until ready to cook.

Step 2. When ready to cook, line a steamer basket with lettuce leaves or foil, place the fish on top, cover, and steam over boiling water for 8-10 minutes until cooked through.

Step 3. Meanwhile, cook the rice according to package instructions, replacing part of the cooking water with coconut milk to total 200 milliliters liquid for 125 grams rice.

Step 4. Stir-fry the broccoli and mushrooms in a large pan with soy sauce, miso, sambal oelek, honey, sesame oil, and lime juice until the vegetables are tender but still crisp, about 5 minutes.

Step 5. Serve the steamed fish alongside the coconut rice and vegetables.
