Instructions
Step 1
Blend bread to breadcrumbs and add lemon zest in flat dish
Step 2
Beat egg and flatten chicken breasts
Step 3
Dip breasts in egg then breadcrumbs
Step 4
Fry sliced onion for 4-5 mins
Step 5
Add grated carrot and crushed garlic and fry for another 4-5 mins
Step 6
Add curry powder, tomato puree, stock & soy sauce and reduce heat & simmer for 15-20 mins until reduced.
Step 7
Air fry chicken breasts at 185 for 20 mins then slice
Step 8
Once sauce is reduced blend to a smooth sauce
Step 9
Serve with rice, sliced chicken and sauce over the top
