Salmon Orzo with Marinated Cucumbers

Instructions

Step 1
Bring 1 1/2 litres of salted water to a boil in a large pot.
Step 2
Add orzo and cook for 6-9 minutes, or until al dente.
Step 3
Drain orzo through a fine mesh sieve and add back into pot.
Step 4
Wash cucumber, dill, and lemon. Trim ends off cucumbers and slice into 1/2 inch rounds.
Step 5
Pick and chop dill leaves. Zest lemon and cut in half.
Step 6
In a medium bowl, whisk half of the lemon juice with sugar until sugar dissolves.
Step 7
Add cucumbers and red onion. Add 1 tbsp olive oil and season with red pepper flakes, salt, and pepper.
Step 8
Drain salmon and pat dry with a paper towel. Season well with salt and pepper.
Step 9
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once hot, add salmon to skillet.
Step 10
Cook salmon for 2-4 minutes per side, until beginning to flake and cooked to an internal temperature of 158°F.
Step 11
Return pot from Step 1 over medium heat.
Step 12
Stir 1 tbsp olive oil, garlic, dill, yogurt, lemon zest, and remaining lemon juice into orzo. Season to taste with salt and pepper.
Step 13
Divide orzo between serving dishes with a side of marinated cucumbers. Place salmon on top of orzo and serve.
