Chicken Parmesan with Pasta and Tomato Sauce

Instructions

Step 1
Step 1 Preheat oven to 230°C (450°F). Place chicken breasts between two sheets of plastic and pound to 1/2-inch thickness. Season with salt and pepper. Dust both sides lightly with flour.

Step 2 Beat egg with minced garlic in a shallow bowl. In another bowl, mix bread crumbs with half of the parmesan. Dip chicken in the egg mixture, then coat with bread crumbs, pressing firmly. Let rest 10–15 minutes.

Step 3 Heat olive oil in a skillet over medium-high heat. Fry chicken 2 minutes per side until golden brown. Transfer to a baking dish.
Step 4
Step 4 Top each chicken breast with 2 tbsp tomato sauce, mozzarella, basil, and provolone. Sprinkle with remaining parmesan. Bake until the cheese is melted, browned, and bubbly.

Step 5 Meanwhile, make the tomato sauce. In a pan, heat 2 tsp olive oil, sauté onion until softened, add garlic, and cook 1 minute. Add tomato sauce, Italian herbs, and a splash of wine if desired. Simmer for 10 minutes.

Step 6 Cook pasta in salted boiling water until al dente. Drain and toss with the tomato sauce.
Step 7
Step 7 Serve chicken parmesan hot over pasta with extra sauce.
